Shiitake mushrooms are edible mushrooms that originated in East Asia.  They have tan to dark brown caps that grow 2 to 4 inches long.  Shiitake mushrooms are fungi that grow naturally on decaying hardwood trees and are commonly eaten as vegetable.  Around 83 percent of shiitake mushrooms are grown in Japan, though they are also grown in the United States, Canada, Singapore, and China.  They're available fresh, dried, and in a variety of dietary supplements. Fresh and dried shiitake mushrooms can both be used in cooking, though the dried ones are slightly more popul. ar The umami flavour of dried shiitake is even stronger than that of fresh shiitake.  The umami flavour is savoury or meaty in nature.
