Asparagus, a lily family member, gets its name from a Greek word that means "shoot" or "sprout." This regal vegetable, which is now widely cultivated around the world, is thought to have originated 2,000 years ago in the eastern Mediterranean region, where it was prized for its unique texture and alleged medicinal and aphrodisiacal properties. Asparagus spears grow from a crown planted in sandy soils and can grow 10 inches in 24 hours under ideal conditions. Green is the most common, but supermarkets and restaurants may stock two other varieties: white, which is more delicate and difficult to harvest, and purple, which is smaller and fruitier.
