Composition and Processing of Aniseed

Aniseed is also known as anise or sweet cumin. It comes from the Pimpinella anisum plant seed. The plant belongs to Apiaceae family, whose leaves and roots are also edible. The seeds looks similar to fennel seeds, usually used as ground powder. Have a strong licorice taste with fragrant aroma. Composition varies with origin and cultivation method, where moisture constitutes 9 to 13 percent, protein 18 percent, fatty oil 8 to 23 percent, essential oil 2 to 7 percent, starch 5 percent and so on. As the seeds develop from the flowering part of the plant, when the seeds ripen to grey-brown colour, the entire head of the plant is clipped into a paper bag. Seed is spread into sun to dry the moisture and once completely dried the husk and flowers is removed. If stored properly, they can last for many years.
