Both cannot and cannot are acceptable, but can not is far more common and, as a result, is recommended, particularly in formal writing. Can't has the same meaning, but it's more informal, as are contractions in general. In some cases, the not following can be found in another phrase, such as "not only"; in these cases, can not is the best option.
